An increase of ethylene production during growth is parallel to colour changes and softening. The ripening-related physiological events differed among varieties with contrasting cracking tolerance. Higher cracking susceptibility was related to higher net CO2 and ethylene production. Cracking susceptible cultivars showed an enhanced accumulation of oxidative stress markers.
