Germinating barley seeds were successfully monitored by X-ray dark-field radiography. Water uptake in sub-resolution stress cracks in the barley endosperm was observed. Starch granules were proposed to produce a strong dark-field signal. The barley modification in starch granules was quantified by image analysis. A constant modification front speed was quantitatively observed.
