A platform for evaluating surface/subsurface food safety and quality is presented. The platform is based on a line-scan Raman imaging and spectroscopy system. The platform can inspect large food samples, such as a 20 cm × 14 cm pork shoulder. The platform can detect melamine powder under an 8 mm thick carrot slice.
