We present a farm-to-fork model for the risk of human trichinellosis from pork and wild boar meat. Parameter estimates are based on observational and experimental studies. The modelled incidence of human trichinellosis in Poland (2.87 cases/M/y) is close to reported incidence (1.15 cases/M/y). Our model may be used to support risk-based monitoring of Trichinella.
