Activity and stability of treated pectinase in supercritical carbon dioxide were investigated.

Significant enhancement in the activity of pectinase was obtained in SCF-CO2 media.

Excellent stability of pectinase was observed under appropriate treatment conditions.

Alterations from the secondary and tertiary structures of treated pectinase were observed.

An exposure of residual groups of tryptophan to outer surface of enzyme was detected.
