EPS contour layers associated with dynamic cell growth and nutrient consumption. S. mutans can control the priority of EPS secretion at specific sites. Live bacteria exhibited cyclic metabolic activities in the period of 23–34 min. EPS discharge is responsive to the shear stress caused by biofilm topography.
