The photostability of flavanones, flavonols and flavones and evolution of their antioxidant activity

The flavonoid degradation kinetics are influenced by light intensity, oxygen amount and chemical structure. The presence of a 3OH group and a double bond C2-C3 decrease flavonoid stability. Flavanones are more stable during storage than flavonols and flavones. Antioxidant activity of rutin and mesquitol increases during a light exposure despite their total degradation. Different degradation pathways occur according to flavonoid structure.
