Response surface methodology was used to study the neutralization stage of refining process. Excess level of sodium hydroxide, temperature, and time were the studied parameters. Free fatty acids and peroxide value were the responses. The optimal parameters generated were an excess level of sodium hydroxide of 3.75%, temperature of 40 °C and time of 20 min.
