Tyrosol and hydroxytyrosol phospholipids were synthesized and characterized as liposomes. Tyrosol and hydroxytyrosol phospholipid liposomes were investigated by TEM, DLS, QCMD and fluorescence measurements. Tyrosol and hydroxytyrosol phospholipids formed liposomes of ∼85 nm in diameter. Tyrosol and hydroxytyrosol phospholipid liposomes had a surface charge of <−25 mV. Surface adsorption of tyrosol and hydroxytyrosol phospholipid liposomes was influenced by phospholipid concentration and the presence of calcium.
