Effect of Fe enrichment on selected vegetable sprouts was studied.

Sprouts enriched with Fe can serve as dietary source of iron.

Enrichment with Fe does not disturb ions balance but slightly decrease biomass.

Enrichment with Fe increases generation of ROS and modifies anti-oxidative system.

Content of phenolic compounds and ascorbic acid increases in Fe enriched sprouts.
