Ecological emulsions were prepared with a biosolvent and an eco-friendly surfactant. Different emulsification methods and processing variables were studied. Laser diffraction and multiple light scattering combined allowed to detect the major destabilization mechanisms. Laser diffraction revealed submicron droplet sizes for the majority of emulsions studied. Ostwald ripening occurs for the emulsions developed with a high-pressure homogenizer.
