The enzymatic activity of lysozyme adsorbed on CHNW was investigated. The lysozyme-CHNW system exhibited higher lysozyme activity than that of lysozyme. The secondary structure of lysozyme adsorbed onto CHNW was changed. The antimicrobial activity of the lysozyme-CHNW system was enhanced. A natural preservative system with enhanced antibacterial activity was developed.
