Green coffee extract improves phenolics content and antioxidant activity of soymilk. The determined phenolic and antioxidant activities differ from those predicted. Enrichment improves the in vitro proteins and starch digestibility. Phenolics-food matrix interactions affect on the quality of soymilk.
