Cleaning and disinfection with ultrasound is an alternative for knives used during cattle slaughter. Ultrasound allowed the reduction of temperature of cleaning and disinfection of knives. More uniform cleaning the knives was found using ultrasound. The structure of knives was not modified by the use of ultrasound.
