Ultrasound-assisted extraction of β-d-glucan was optimized for high yield and purity by RSM. Ultrasound-assisted extracted β-d-glucan had similar molecular characteristic to those obtained by conventional methods. β-d-Glucan from hulless barley cultivar Lut could be used as a potential hydrocolloid in food industries.
