Substitute common solvents with Brönsted acidic ionic liquid to extract pectin. [HO3S(CH2)4mim]HSO4 enjoyed good solvent effect and acidic effect. The proposed method is more efficient to extract pectin than traditional methods. Response surface methodology was employed to optimize the extraction process. Pectin samples were observed by atomic force microscopy.
