Zinc and selenium accumulation and their effect on iron bioavailability in common bean seeds

Common beans maintain relatively constant mineral levels during seed development. Zn and Se treatments greatly enhance these micronutrient concentrations in seeds. Zn and Se treatments exert minimal effects on phytic acid and polyphenol levels. The Fe bioavailability was not greatly affected in the Zn and Se biofortified seeds. Common beans can be biofortified with Zn and Se without affecting Fe bioavailability.
