Hydrogen peroxide and calcium increase EPS production by Lactobacillus rhamnosus. c-EPS yield was highest, 2498 mg/L, for 10 mM calcium chloride and 3 mM H2O2. The hetero-polysaccharide EPS included fructose, mannose, glucose, and rhamnose. EPS had high activity against pathogens and oxidative damage in NIH/3T3 cells.
