Allium Chemistry: Synthesis of 1-[Alk(en)ylsulfinyl]propyl Alk(en)yl Disulfides (Cepaenes), Antithrombotic Flavorants from Homogenates of Onion (Allium cepa)

A series of 1-[alk(en)ylsulfinyl]propylalk(en)yl disulfides (-sulfinyl disulfides) of structureRS(O)CHEtSSR', R, R' = Me, (E,Z)-MeCH=CH,n-Pr, and CH2=CHCH2, termedcepaenes, have beensynthesized by a variety of routes including oxidation of1-[alk(en)ylthio]propyl alk(en)yldisulfides,RSCHEtSSR', termed deoxycepaenes. The cepaenes are identical tocompounds isolated fromhomogenates of onion (Allium cepa) and tocompounds identified in these homogenates by liquidchromatography/mass spectrometry, while the deoxycepaenes are identicalto compounds found inAllium distilled oils and in other materials.
